Do we still need [php-5-*] tags?
@Dharman Both, you can install them (for Ubuntu 16.04, which is LTS, the default is PHP 7.0), and they do at least security fixes: changelogs.ubuntu.com/changelogs/pool/main/p/php7.0/…. Eidt: About CentOS I'm not sure, because I'm not using it.

I'd like to point out, that PHP's EOL is not equivalent to "not supported any more". Ubuntu still supports PHP 7.0 with its LTS version (Cent OS 7 even supports 5.3). See this comment: github.com/composer/composer/issues/8785#issuecomment-673038‌​230
