New editor is inserting www.stackoverflow.com instead of the intended URL
The issue has been fixed upstream in the Stacks-Editor codebase. Once a new release has been cut and pulled into the core codebase, the fix will arrive network-wide. I do not currently have a time ...

How to manually specify language of a fenced code block in Teams?
Click the "Markdown" switch in the right. Tap that and you'll see the markdown code, including the back ticks for the code fence and be able to add a hinted language.
