You can install the "Show Edited Votes" user script. It adds a "edited since voting" sub-tab to your "votes" tab:
Selecting the sub-tab will show all posts which have been edited since you voted on them, and displays if the vote was a down-vote or an up-vote.
There is one caveat, however. The person who wrote the script has, so far, chosen not to obtain an API key.1 Thus, the number of requests which they can make in a single day is quite limited. As a result, depending on the number of votes you have cast, you may only be able to select the "edited since voting" sub-tab a few times per day prior to running out of SE API quota.2 I ran out after using it a few times while writing this answer. The more votes you've cast, the faster that will happen.
